We all have moments in our lives that gives us a special and enduring
commitment.
Being in the food business is a very challenging commitment. One has
to be ever vigilant towards what diners want and what they enjoy to eat. Also
equally important is the affordability of the food without sacrificing
quality and taste. Another premium to
consider is how to maintain impeccable cleanliness inside a restaurant. Cleanliness is the prime factor to achieve
the desired ambiance and this separates one restaurant to another.
Being a chemical engineer by profession, I may seem a square peg in a
round hole but I would like to believe that I was fated to be in the food
business both by design and genes. My
father is a champion cook and I must have caught the passion from him. By
design, I mean, God must have fitted me in this that I do now for a purpose. Mandarin Hotel and Restaurant which I have managed since 1983 is my second home and second family, but my commitment in it is even stronger at |
times because I feel that the obligation is
more exciting. I am practically “hands
on” everything from marketing to ensure quality ingredients to banking to
make sure there would be no future financial glitzes up to maintenance so as
to minimize cost.
I make use of the formal and strict “employer-employee” relationship
for a management style. I feel that
only when there is a definite parameter defining the boundary between
employees and the employer could I impose the discipline highly needed in the
food business.
I wish to elevate all my employees to a level at par to a professional
so they would not feel just a blue-collar worker. Maybe, this way they would
give their best in their work because I always hammer in them the dignity of
their work. And that they must be friendly, accommodating and
service-oriented as this is what is the core at the food business, the diner
must be made comfortable while eating.
One comes to Mandarin Restaurant to eat and be treated like a
king. |
